With over 30 years of culinary experience, he brings a dynamic, innovative energy to Royal Cliff’s diverse culinary scene. His passion to continuously learn and explore his craft has resulted in an impressive career spanning Asia and Germany with previous work experiences that include working for 5-star hotels in different countries such as the Kempinski Resort & Spa in China, Anantara Resort & Spa and Centara Grand Beach Resort in Thailand as well as 5-star cruises such as the MS Royal Viking Sun. His wide ranging experience, creative flair, exceptional talent and ardent passion for his craft make him the ideal chef to oversee all culinary operations of the award-winning restaurants of the Royal Cliff Hotels Group.

Where does your passion for being a chef come from?

I have always wanted to become a chef since I was young. I’m not sure if I was inspired by anyone but it has always been my dream job. Maybe it was also because of my father, who was an aerodynamic engineer, but who always talked about his second dream which is being a chef on a ship and being able to travel around the world. I am happy to say that I was actually able to do what he had dreamed of at one stage in my career.

What do you like most about what you do?

The team work. Without a good team, you would not be able to make all the guests happy.

For every dish you make, what is your goal?

Of course, my goal is always that the guests will enjoy it.

What is your signature dish?

As a chef, I get inspired from many things and will usually create or develop a dish to the style I like, but I don’t like to name a signature dish. A street vendor has a signature dish which is usually the dish that he makes for over 15 years. As an Executive Chef, you can’t have only 1 dish in your recipe book. You constantly get new inspirations and therefore your food and presentation will change as well.

Where do you get inspiration for your dishes?

I get my inspiration from everywhere. You need to live with open eyes.

What is your favorite ingredient to work with?

For me, there is no such thing as having only one favorite ingredient, as good food is the right combination of several ingredients and spice blends.

Have there been any significant guests that you’ve served? Who has been the most notable?

Back in Germany, I catered for several politicians including Helmut Kohl, a former chancellor of West Germany, Hans-Dietrich Genscher, a former foreign minister and vice chancellor of West Germany and some government ministers. German actors like Hardy Krüger are on the list as well. In the International scene, there were royalties like Princess Anne from England, actors like Sean Connery, Jean Collins and Don Johnson and since I worked in Thailand, I had the chance to cater for 3 Prime Ministers: Thaksin Shinawatra, Abhisit Vejjajiva and Yingluck Shinawatra.

What do you like doing on your free time?

I enjoy my family life and spend time with my son.

What has been the highlight of your career so far?

I once had the honor to work with Paul Bocuse, the Chef of Chefs, who sadly past away this year.
