The Inspiration Behind Our Signature Lobster Dish

Our signature lobster dish pulls inspiration from Thailand’s beloved Khao Pad Sapparod, which is a pineapple fried rice. The chefs at Royal Cliff reimagined this familiar Thai classic with a luxurious Western touch. They replaced the traditional shrimp with locally sourced lobster, and combined it with a gently-curried, creamy cheese sauce. Together, this created a rich and indulgent dish that’s served in a fresh pineapple shell – just like Lobster Sapparod. It creates an addictive balance of rich, savoury, sweet and mildly spiced flavours.

Over the years, Lobster Sapparod has become one of Panorama’s – the Royal Cliff’s all-day dining establishment – most recognisable dishes and a favourite among returning guests. Its combination of Thai inspiration, premium local seafood from our trusted and certified seafood supplier, and theatrical presentation has helped establish it as a signature of the restaurant. Served in a hollowed-out pineapple half, the presentation makes it particularly photogenic, which adds to its appeal for our guests.

One of the most appealing aspects of this lobster dish is the contrast between luxury elements and tropical Thai character. Lobster is a premium ingredient, while pineapple is an everyday tropical fruit strongly associated with Thailand. Though interestingly enough, pineapple actually held the title “King of Fruits” in 17th-century Europe. This was due to the fruit’s rarity at the time, as well as its spiky exterior that was reminiscent of a crown, ultimately making it the symbol of wealth, power, and regal status.

How To Make Lobster Sapparod

Interested in trying your hand at preparing our signature lobster dish? Our Executive Chef and Deputy Head Chef detail a guide for you to follow in the comfort of your home.

Step 1:

Each piece of lobster is carefully opened by hand. The sweet, translucent meat is gently lifted from its shell in a single piece. Our chef then removes the fine digestive vein that runs along its length – this is a small but deeply essential step that keeps the flavour clean and delicate. The meat is cut into even, generous pieces. This is to ensure that every mouthful of lobster cooks at the same pace and keeps its tender, succulent texture.

Step 2:

The diced lobster is briefly sautéed over moderate heat, just long enough to awaken its natural sweetness without firming the flesh. It is then folded into a velvety cream and cheese sauce, seasoned with a gentle hint of curry. The spice is deliberately restrained, adding a soft golden warmth that complements the lobster rather than overpowering it.

Step 3:

The lobster mixture is spooned into a hollowed pineapple shell. It serves as both an aesthetic vessel and a quiet layer of flavour, giving a subtle tropical fragrance as it bakes. In the oven, the surface slowly turns golden and lightly gratinated, forming a delicate crust that gives way to the rich, creamy filling beneath.

Step 4:

To complete the dish, finish with cashew nuts that add a gentle crunch and plump raisins that bring small bursts of sweetness that balance the warmth of the curry. It is served alongside fragrant yellow coconut rice that is ready to soak up every last spoonful of the delicious creamy sauce.
